Worked. Hot yoga. Home. Last night, after all the food shopping, I made some dinner. Hubs and I feasted on Tilapia and peas. Dinner took a total of 15 minutes to make and it was awesome. I schmeared some fancy sweet Bavarian mustard on the fish. Then topped it with a crumb mixture made of whole wheat panko crumbs, fresh grated parmigiana cheese & some salt & pepper. I cooked it in a hot oven, 425 degrees, for 15 minutes, and it was great! While it was cooking, I opened a can of Green Giant Le Sueur baby peas. Drained them. Sprinkled cayenne pepper on them & microwaved them for 2 minutes. The hotness of the peas, combined with the sweetness of the mustard on the fish was just delicious. ...and in only 15 minutes! Today at the office, Bossman asked me to join him for lunch. All I could think about was the leftover fish I had brought in for lunch, but I said yes anyway. We went over to the deli near the office and I ordered a salad. When the waiter served me my salad, I went into my purse and took out a ziplock bag. Bossman was leary. I smiled and dumped the Tilapia onto my salad and started eating. He was mortified! :) I was satisfied. Fabulous lunch Bossman. Thanks! :) The pictures are of a trumpet tulip plant that was in bloom at the theater on Saturday. It's my favorite tree. I'm gonna look into buying one and planting it at the house. Isn't it amazing? I may plant an avocado tree too. Maybe mangoes. We'll see.
